<h1>Domaines et Vins de Propriété - Bourgogne</h1> <h2></h2> <h3>ESTATE</h3> History : The Château de Chénas was built during the Restauration in 1821 by Adrien de la Hante on a beautiful place planted with old trees, on the hillside of the village of Chénas in Beaujolais. A very old balustrade with a triangle-shaped pediment decorates its neo-classic front. The Cave du Château de Chénas was created in 1934 by about fourty vine-growers from Chénas, Romanèche-Thorins and La Chapelle-de-Guinchay, bringing together 44 hectares of vines. Nowadays, it represents 254 adherents, 140 estates and 15 000 hectolitres a year. It mainly produces « Moulin-à-Vent », « Chénas », and « Beaujolais-Villages », but also « Beaujolais », « Fleurie », « Saint-Amour » and « Juliénas ». It is the owner of 5 hectares of Moulin-à-Vent vines. Between tradition and modernity : the particularity of the Cave du Château de Chénas is an exceptional beautiful old cellar dating back from the XVIIIth century and being the biggest one in the Beaujolais region. The wines aged in oak barrels are placed there. Nowadays, the winery is equipped with the best modern material such as thermo-regulated stainless steel vats, a pressing room with 6 presses linked by a conveyor belt with the vats and the place where the grape-pomace is drained off, a modern bottling chain and a bottle stocking area at constant temperature. The vineyard : The Chénas and Moulin-à-Vent vineyard is one of the oldest one in the Beaujolais region. The Cave du Château de Chénas selects the best plots of the villages of Chénas, Romanèche-Thorins and La Chapelle-de-Guinchay where the unique grape variety, Gamay, is hand harvested. The vine-growers are engaged by a quality charter. 35-year-old vines on average. Scraping, short pruning, green harvest if necessary, sustainable agriculture. <h3>WINE MAKING</h3> The grapes are harvested by hand. Wine is fermented in thermo-regulated stainless steel vats. 10- to 15-days vatting period at 30° to 32°C with pumping-over twice a day. Pneumatic pressing. Wines are aged in oak barrels, in concrete tanks, or in stainless steel vats, and are bottled on spring in order to protect their aromas, or the year after for wines aged in barrels. <h3>SURFACE</h3>
