ESTATE
As past and recent history has shown us, one of the essential factors for the development of a vineyard region is its proximity to commercial markets or communication networks. One of the great advantages of the Yonne vineyards is that they are situated only 150 kilometres from the Paris region. Today, many Parisians have second homes in the Yonne and purchase local supplies here. In the past, the kings of France (Henri IV and Louis XIV) and Europe were also very fond of these wines, and the river Armançon enabled them to be transported rapidly to Paris.
The Domaine:
The Domaine de l'Abbaye de Quincy, perched at the top of the village of Epineuil continues to follow the long tradition that began in the 18th century, when the monks who lived here produced a wine that was widely renowned, in particular for celebrating mass.
The abbey used to store hundreds of barrels in its vast underground cellars. One of the three storage cellars was reserved for the valuable wines of Epineuil, the second for Chablis wines and the third for Molosmes.
VINE GROWERS
In just a few years, Dominique Gruhier-Delaunay has built up the domaine, and has applied a coherent range of practices from the vines to the winery. These include: ploughing; cover crops; control of yields and aeration of the bunches (so that they can reach full maturity when this is late); the purchase of a sorting table; the purchase of new vats (so that the wine can be vinified at the right moment, and also so that the different terroirs can be vinified separately, enabling their individual characters to be studied); the purchase of one year old oak barrels, rather than the 4 to 5 year old barrels used in the past; very precise doses of sulphur during the ageing process; etc.
In a word, the domaine is in full effervescence and is still one of the best in the Yonne for both its red wines, its speciality, and its whites, which are also excellent. The intensity and finesse of these wines will please and surprise many palates.
WINE MAKING
The domaine's specific strength is that it combines the most modern vinification techniques with ancestral Burgundian methods (such as the use of the old abbey press dating from the end of the 18th century), the aim at all times being to continue improving the quality of the wines.

- 24 ha (20 hectares of Pinot Noir and 4 hectares of Chardonnay).
