ESTATE
The domaine was founded in the 17th century by one of the great aristocratic families of Mâcon. In 1857, as there were no descendants, it was transferred to the bishop of Autun. When the properties of the Church and the State were separated in the beginning of the 20th century, the Saône et Loire département became the owners of the domaine and, at the beginning of the sixties, allowed the Lycée Viticole de Mâcon Davaye (Viticultural Secondary School) to be founded on the Poncétys site. The domaine currently belongs to the viticultural school. The domaine is situated in the south of Burgundy, at the crossroads of 3 great regions (Burgundy, Bresse and Beaujolais), each with a rich historical past and a world-renowned cultural and gastronomic heritage.
Davayé, a vine-growers' village in the heart of the Saint Véran cru, is situated near the prehistoric site of Solutré, in the midst of gently rolling hillsides and vineyard slopes.
VINE GROWERS
The domaine manager is assisted by 9 employees and pupils from the school, who work together on the development of the vines, and the production and promotion of the wines.
The Domaine des Poncétys has 3 missions today:
- To be a fully-fledged, economically viable wine-producing estate.
- To serve as a training centre for young people and adults.
- To carry out experiments and studies for the agricultural world in partnership with research and development organisations. Its methods of work are based on a long-term approach. This concept is at the heart of the domaine's philosophy and is applied to the production processes, preservation of the environment, economic performance and maintaining the social fabric. The school adheres to the principles of “viticulture raisonnée” (“reasoned” vine-growing).
WINE MAKING
Red wines:
The wines are vinified in enamel vats and oak barrels in an 18th century vaulted cellar. The ageing period lasts for between 4 and 6 months.
White wines:
Part of the "Saint-Véran" cuvée is aged in stainless steel vats and oak foudres for 6 months, producing a wine that is very traditional both in the way it is made and in its aromatic expression. The "Pouilly Fuissé" is aged in oak foudres for 5 months.
