ESTATE
The Bernards are an old Burgandian family. In 1817, one of their ancestors, nicknamed “la Vivacité” (“the lively one”), founded a mustard and vinegar factory in Dijon. In 1918 the family broadened their horizons and bought the “Clos Bizoutte,” well-known in Fixin as a meeting place for lovers (Bizoutte comes from the word “bisou” - kiss). This was renamed "les Herbues," and then finally took the more pious name of "Clos Saint Louis" in 1950.
Many of the family members have been Mayors of Dijon and Charles Bernard was the Mayor of Fixin. His son, Philippe, took over the domaine in 1995.
The estate, situated 300 metres from the 12th century church, includes an old vigneron's house built in 1634 and a hunting lodge that dates back to 1703, to which 12 hectares of vines situated on several parcels in the hamlet of Fixey have now been added.
VINE GROWERS
The domaine is run by the young Bernard couple with the help of two employees.
The Bernard family is probably the only one in the Côte de Nuits to own an unopened bottle of Charmes-Chambertin 1937, bearing the label of a famous grower, Gaston Roupnel.
WINE MAKING
Traditional viticultural methods are used, including winter ploughing, limited phytosanitary treatments, control of yields and manual harvesting of the whole crop.
The vinification process includes: total destemming, cold maceration, punching down and pumping over, yeast and enzyme addition depending on the characteristics of the vintage, vatting time between 12 and 15 days.
Malolactic fermentation takes place partially in vats and partially in barrels. The wine is matured in oak barrels for 12 to 18 months (up to 30% new oak, depending on the vintage).
Bottling takes place on the domaine.
