<h1>Domaines et Vins de Propriété - Bourgogne</h1> <h2></h2> <h3>ESTATE</h3> Domain Sirugue has been gathering plots of vines since the end of the 19th century. Today it owns 12 hectares of vineyards mostely on the commune of Vosne-Romanée, and offers a wine in each level of appellation. What Domain Sirugue pursues are supple, fruity wines with a silky texture, expressing the Burgundy terroir, made with perfectly ripe fruit. The Sirugue wines have a smooth and balanced finish, and can be laid down for at least five or more years, over ten years depending on the vintage. Domain Sirugue's wines are distributed globally. <h3>VINE GROWERS</h3> Today, the third and fourth generation of the Sirugue family tend to the domain, Robert and his children Marie-France and Jean-Louis, as well as Catherine, Jean-Louis' wife ,who joined the domain several years ago. <h3>WINE MAKING</h3> Where the winemaker's hand still performs exactly the same tasks as before, the progress made by oenology largely contributes to the quality of the wines. The winemaking is performed in a traditional manner with modern equipment. The hand-harvested grapes are gathered in enameled containers which very quickly transfer the harvest onto a sorting table in order to eliminate any bunch that isn't perfectly sane and ripe. The bunches are then fully destalked by a destalker. Alcoholic fermentation takes place in stainless steel tanks and the musts are thermo regulated depending on the weather conditions. On average, the cold maceration lasts for 5 days, after which the alcoholic fermentation is triggered by raising the vats' temperature to 59-64°F. Every day the wine is pumped over in order to gain density, and twice a day the cap is punched down. This is done for 10 to 15 days. Once the wines have finished the alcoholic fermentation, they are drawn off and pressed before being transferred to the cellar for the malolactic fermentation. The wines are matured in oak barrels which are partly new for 15 to 18 months according on their specific character. During the year which follows the harvest the wines are racked once in order to remove the lies, and one more time before the appellations' different barrels are blended for bottling.
